This is a popular snack in Gujarat State of India. It can be made easily and is really great in taste.

Ingredients
Dhokla
- Gram flour(Besan) – 1 bowl
- Salt – 1 teaspoon
- Sugar – 1 teaspoon
- Lemon juice – 1/2 teaspoon
- Turmeric powder – 1/2 teaspoon
- Baking soda – 1/4 teaspoon
- Fruit salt(Eno) – 1 teaspoon
Tempering
- Oil – 2 ml
- Mustard seeds – 1 teaspoon
- Curry leaves – 10 pieces
- Green chili – 2 pieces (slit longitudinal)
- Sugar – 1 teaspoon
Tamarind Chutney
- Tamarind – 10 grams(soaked 15 minutes)
- Asafetida – 1/4 teaspoon
- Cumin seeds – 1/2 teaspoon
- Sugar – 1 teaspoon
- Salt – 1/2 teaspoon
Procedure
Dhokla
- Take a bowl and mix besan, sugar, salt, lemon juice, turmeric powder well with little water.
- Add 1 ml hot oil to the mixture and mix again.
- Keep the mixture aside.
- Take a container and grease the base with oil.
- Add the besan mixture to the container.
- Add eno and baking soda just before transferring the mixture to the container.
- Spread evenly and steam cook the mixture for 15 minutes.
- Check if its done by dipping a knife.
- If no residue on knife its done.
- Take out the bowl and let it cool.
- Remove the dhokla from container with the help of knife and turn it upside down on a large plate.
Tempering
- Take a kadhai and add oil .
- To it add mustard seeds, curry leaves and slit green chili.
- To this add water and sugar.
- Now pour the whole thing on the dhokla spread on plate.
Tamarind Chutney
- Take a kadhai and add oil.
- To this add asafetida, cumin seeds and soaked and filtered tamarind juice.
- Add sugar or jaggery and salt.Let it come to boil.
- Chutney is ready.
Serve the Dhokla with Tamarind Chutney.
