This is a popular street food in North India.
Ingredients
Potatoes – 6 pieces boiled, peeled and mashed
Multipurpose flour and Wheat flour (4:1 ratio) – 4 bowls
Green chili – 2 pieces medium chopped
Garlic – 5-6 pieces chopped
Ginger – 1 inch Julian
Red chili powder- 1/4 teaspoon
Black pepper powder – 1/4 teaspoon
Turmeric powder – 1/4 teaspoon
Chat masala – 1 teaspoon
Green coriander – 2 teaspoon chopped
Salt – to taste
Vinegar – 5 teaspoon
Butter – 2 teaspoon
Onion – 2 medium chopped
Green chutney – 1 bowl
Procedure
Take the vinegar in a bowl and add chopped green chili to it.
Let it soak for a while.
This gives tangy flavor to the Frankie.
Knead the multipurpose flour and Wheat flour mixture with water.
Keep it covered for 10 minutes.
Potato filling

Take a tawa or kadai and add oil.
To this add green chili, garlic, ginger chopped.
Cook well and add red chili powder, black pepper powder, turmeric powder and salt.
Over this add boiled peeled and mashed potatoes.
Add chat masala and coriander powder (optional).
Make long seekh kabab like balls of the mixture and shallow fry them in a tawa with butter or oil. Keep aside.
Roll recipe
Cut the kneaded flour mixture into small pieces.
Make thin rotis out of them.
Cook lightly in flame on both sides and keep them in casserole.
While making the Frankie they need to be fried lightly on both sides till brown with butter.
Green chutney
Green Coriander 1 bowl, tomato 1 piece and green chili 1 piece to be grinded in a mixer and salt to taste added to it.
Frankie preparation

Take the butter cooked rotis in a plate.
To this a seekh kabab like roll of tomato filling.
To this add green chutney, chopped onion and green coriander.
Over this spread chat masala.
Chopped green chili dipped in vinegar. Cover up the roll and close it with aluminum foil or paper.
Serve Vegetable Frankie hot with Tomato sauce or Green Chutney.
